Apple Clafouti Recipe
This dish should be served still warm, though not necessarily hot: it will sink as it cools.
Ingredients
4 tart apples, peeled, cored and sliced
1/4 c. unsalted butter
1/4 c. dark rum
1/8 tsp. ground cinnamon
2/3 c. sugar
1 c. milk
3 lg. eggs
1 tbsp. vanilla
1/8 tsp. salt
2/3 c. all purpose flour confectioners sugar
Directions
Melt butter in a large skillet over medium high heat. Add apples, 1/2 cup sugar and brandy and cook until apples are glazed and heated through (about 5 minutes).
Heat oven to 350 degrees. Butter 10 inch round baking dish and set in in the oven to heat.
Put eggs, milk, butter, vanilla, flour, sugar and salt in lender and blend until smooth.
Pour half of the batter into the dish. With a slotted spoon, remove the apples from the skillet and spread prepared fruit evenly over batter.
Then pour batter over fruit and bake until puffed and brown; a sharp knife should come clean out of the middle, about 45 minutes. Sprinkle 2 tsp sugar and a little cinnamon over batter.
Warm reserved juices from the fruit and drizzle over top.
